A Tart Valentine’s Day Dessert

Valentine’s Day is the perfect day to whip up some special treats! Raspberry velvet tarts are the perfect treat for you and your valentine! It’s creamy, sweet with a hint of tartness from the raspberries! Give it a try.

Raspberry Velvet Tart Recipe

Ingredients:

Crust:

If you have premade crust you prefer to use, you can skip this step and go right to making the delicious filling!

3/4 cup cake flour and

3/4 cup all purpose flour

1/4 cup granulated sugar

1/2 cup unsalted butter,chilled

1 egg yolk

3 teaspoons whipping cream

2 tablespoons (approx) cold water

Filling:

13 ounces chopped white chocolate

1/2 cup hot whipping cream

1/4 cup unsalted butter at room temperature

2 cups fresh raspberries or thawed, drained frozen one

**Small white chocolate chips for garnish

Sprinkle of powdered sugar

Directions:

Crust:

Mix both flours and sugars in large bowl.

Cut in butter until it becomes coarse.

Beat egg yolk with cream.

Pour the mixture over the flours and blend, add only enough water to hold dough together.

Wrap dough in plastic wrap and chill 30 minutes.

Roll dough on lightly floured board until 1/8″ thick.

Transfer to 9″ tart pan with removable bottom.

Chill 30 minutes.

Line crust with foil or parchment and fill with something for weight.

Bake in a 350F oven for 15 minutes.

Remove foil and weight and continue baking until golden.

Cool on rack.

Filling:

Melt chocolate in top of double boiler, stirring until smooth.

Mix in cream and butter.

Remove from over water.

Sprinkle the berries evenly over the crust, saving a few for garnish.

Pour filling over berries and refrigerate tart until set, about an hour or so.

Top with mini white chocolate chips and berries and sprinkle with powdered sugar.
