Baked Feta & Tomato Pasta

This pasta dish is taking over Tik Tok and social media because it is so amazingly good! The sweet and salty flavours of cherry tomatoes and feta, baked together is not only a delicious combination, it’s also ridiculously easy to make. Anyone can make this dish. My daughters and I made it once and then 3 days later we were craving it so hard we had to make it again… And this time, we added garlic! It was a total hit.

Ingredients:

1 quart cherry tomatoes or sweet vine-ripened tomatoes, whole or halved

1 block of feta

1 clove of chopped garlic (optional)

1/4 small red onion sliced (optional)

Couple teaspoons of basil (depends on your taste)

Salt and pepper to taste

Drizzle of olive oil

Pasta (I used gluten free spaghetti)

The good thing about this recipe is that it can all be pretty much done by eye. You want extra tomatoes, add them. You want to add garlic, go ahead. Do what feels right.

Directions:

Preheat your oven to 375.

Put the block of feta in an oven proof dish, and add the tomatoes around the feta. Add the salt, pepper, basil, chopped garlic and oil.

Once the oven is heated, put the dish in the oven and cook for 40 minutes.

While the dish is cooking, boil your water to cook your pasta! Once it’s al dente, drain and set aside.

Once the tomato-feta dish has cooked for about 40 minutes, take it out and use a fork or spoon to stir it all together. Add it to your pasta and enjoy!
